Green Enchilada Crock Pot Chicken Tacos

This recipe is so easy, and its in the crock pot so you really don't have to do much!! 

I was asked about this recipe after i'd already made it, so i dont have pictures, but when its done i'll update with what the finished product looks like!


Ingredients:
1.5lbs chicken(i used breast, but you can easily use thighs)
1/2 taco seasoning packet( using the whole pack kind of makes it overwhelming)
1 15oz can Enchilada sauce(i used green because thats what i prefer, red goes just as well)
1 8oz can Rotel diced tomatos with chiles.
Flour Tortillas
Whatever toppings you like(lettuce, tomato, sour cream, guacamole)


*If you like shredded chicken, leave the chicken breasts(or thighs) whole in the crock pot

  • Cut chicken into small pieces, place in crock pot
  • Sprinkle chicken with taco seasoning and mix to coat all the pieces
  • Add tomatoes and enchilada sauce
 Set to low and cook for 6 hours, or if your in a hurry High for 3 hours.

If you wanted shredded chicken, take the chicken out and shred it between 2 forks then put it back into the sauce. Scoop it into some warm tortillas, top with your favorite toppings and enjoy! We always have beans and spanish rice to go along with!!
